CWJ Food Bank Challenge: Day 14
Today is officially half way through the challenge, and needless to say things are starting to get a bit harder. We are out of milk today, even though we just bought a gallon a few days ago. We are out of butter now, and because we use real butter and not margarine, it rings in at about $6/lb. I sacrificed half of the butter to make shortbread cookies last week, the kind of thing I probably won't have the luxury of doing with the next lb that I purchase, if I can somehow fit it into my budget. We have just over $20 left for the next two weeks, but we do have a lot of non perishable items and still quite a bit of meat left.!
Breakfast (10:00 am)
Coffee
Total Cost: $0.05
Coffee was black this morning, a significant downgrade from the cream that we usually have with our morning brew. I can hardly wait until we can afford cream in our budget. This has been one of the biggest challenges for me so far, food wise.
Lunch (12:06 pm) and Dinner (6:07 pm)
Beef Stroganoff
Total Cost: $4.05
I took all of the beef drippings and 1/3 of beef from the roast that we cooked last night and boiled it with 2 cups of water and 1/2 a recipe for homemade noodles that I had frozen a few weeks back. Just before serving, I stirred in 1/2 cup of sour cream to the entire pot. This recipe made 4 huge servings, so we ate it for dinner too.
Snack (9 pm)
Popcorn
Total Cost: $0.28
Marc made a bunch of stovetop popcorn for a snack tonight using popcorn kernels, oil, butter, and salt.
Total time spent preparing food today: 10 minutes
Total Food Cost: $4.38 or $2.19 per person
Over/Under Budget: $3.62 or $1.81 per person
