Gramma's Homemade Bread Maker Bread/Buns




This is my Gramma’s recipe, and makes excellent bread/buns.  The great thing about this recipe is that it's very versatile.  You can easily make it your own with a few additional ingredients.


Ingredients:

1.5 cups lukewarm water
1 ¼ tsp yeast
2 tbsp sugar
2 tbsp skim milk powder
1 ½ tsp salt
2 ½ tbsp margarine
4 cups flour (any combo*)

Directions:

Place lukewarm water in bread maker.  Add yeast, followed by the rest of the ingredients.  Set your bread maker to make dough only.

Bread:
Once dough is ready, transfer to a buttered bread dish (this recipe will make 1 large loaf or 2 small loaves).  Cover with a  tea towel and let rise, approximately 30 minutes.



Bake in 375 F oven for 25-30 minutes, or until golden brown.

Buns:
Once dough is ready, separate into 12 balls placing on two buttered cookie sheets.  Cover with a tea towel and let rise, approximately 30 minutes.

Bake in 375 F oven for 15-20 minutes, or until golden brown.

* Flour Combinations:  I usually use 2 cups multigrain flour and 2 cups white bread flour.   Sometimes I displace 1/4 cup of the multigrain flour with rolled oats and flax seeds, or my Gramma's favourite, 7 grain (you can purchase this in your bulk food section).

Meatballs with Sweet & Sour Apricot Sauce

 Meatballs with Sweet & Sour Apricot Sauce

Ingredients
- 2 eggs
- ½ cup minced onions
- 2 lbs Ground Beef
- 1 cup Seasoned dry breadcrumbs
- 2 tsp Salt
- 4 tbsp Butter
- 2 tbsp Olive oil
- 12 oz 1 jar Apricot jam
- ½ cup  Bbq sauce
- Cubed Mozza Cheese


Directions
Meatballs:
Put 2 eggs into a large bowl; beat gently with fork, set aside.  Add ½ cup minced onions.  Add to eggs along with 2 lbs ground meat 2 tsp salt and 1 cup dry seasoned breadcrumbs.  Mix with clean hands.  Scoop 1 round tablespoon of meat and roll into balls with your hands.  Add a small square of mozza to centre.
In a Large frying pan med heat 1 tsp butter and 1 tbsp olive oil brown 2-3 minutes 1 side.  Cook 6-7 minutes total.  Transfer to large flat baking dish. 
If you are cooking several meatballs and are reusing the pan, wipe out pan with paper towel add another 1 tbsp olive oil, 1 tbsp butter each time.
Sauce:
In a medium size bowl melt 2 tbsp butter in microwave (about 20 seconds).  Add 1 – 12 Oz jar of apricot jam and ½ a cup of your favourite bbq sauce.  Wisk until blended.  Pour over meatballs.  Bake in a preheated 350 degree oven for 30 minutes or until sauce is bubbly.

Strawberry Yogurt Parfait


 
This breakfast tastes like dessert.  It's awesome for a quick breakfast you can take with you.  If you pack this in your lunch and like your granola crunchy, assemble all ingredients except granola; instead placing granola in zip lock bag and add right before eating. 

Ingredients:
- 3-4 medium strawberries (or any other type of fruit)
- 1/2 cup plain yogurt
- 1/4 cup granola
- 1 tbsp organic maple syrup

Directions:
Spoon yogurt into dish.  Slice strawberries on top of yogurt.  Sprinkle granola on top.  Drizzle with maple syrup.

Banana Chocolate Chip Cookies


These are a favourite in our house (my husband devours these cookies by the handful).  They taste just like banana bread and are really soft; reminiscent of muffin tops.  The riper the banana's, the deeper the flavour will be.

Ingredients
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 cup white sugar
- 2/3 cup butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 1 cup mashed bananas
- 2 cups semi sweet chocolate chips

Directions

Preheat oven to 400 degrees F (200 degrees C).  Grease cookie sheets.  Sift the flour, baking powder, salt, and baking soda together, and set aside.

Cream the butter with the sugar until light and fluffy.  Beat in the eggs and vanilla.  Mix in the mashed bananas.  Add the flour mixture, and stir until just combined.  Stir in the chocolate chips.  Drop by spoonfuls onto prepared cookie sheets.

Bake in preheated oven for 12 to 15 minutes.
