Whipped Shortbread Cookies


Nothing says Christmas like whipped shortbread.  The cookies are as light as air, and literally melt in your mouth the second you bite into them!  They are incredibly easy to make (only 3 ingredients) making them an ideal cookie for the busy Christmas season! 

We've had a pretty busy week at my house!  My Father-in-Law is up visiting this week.  We started renovations on our house last month so he came down to help us with the laminate floors.  He and I spent the entire day ripping out carpet yesterday (I have a newfound hate for tiny staples) and today we laid the underlay and flooring in the living room.  We're about 3/4 done, and since Marc is off tomorrow, we will likely finish the rest tomorrow morning.  


My coworker bought me this cute "Charlie Brown Christmas Tree" and since we are renovating our living room this year are lacking space in our living room, we decided not to put a tree up.  That and we will also be heading to my brother's for the holiday this year, so we will be exchanging gifts on Christmas morning under his tree.  


Tell me, how are you spending your holiday this year? 

Ingredients
- 1 lb (2 cups) butter (use the real stuff - trust me)
- 1 cup icing sugar
- 3 cups flour
Directions
Cream together butter and icing sugar in a stand mixture (with the whisk attachment) set to medium speed.  Slowly incorporate the flour (I add about 1/2 cup at a time being sure that each addition is fully mixed before adding the next).
Continue to whip for about 10 minutes, stopping every few minutes to scrape down the sides of the bowl.  You're going for a dough that's the texture of whipping cream, and as light as air (it will get there, I promise!).
Spoon onto cookie sheet (or use a piping bag).  Leave plain or top with your choice of sprinkles, nuts, jam, or dried fruit.  
Bake in a pre-heated 350 degree oven for about 10-12 minutes, until the edges are golden brown.
