Cheddar Bacon Potato Bites



This past weekend I was invited to two separate get togethers, both of which I wanted to make an appetizer for.  One friend was having a Grey Cup party in the afternoon, and another friend was having a dinner party for The Walking Dead mid-season finale in the evening.  It made sense to double up on ingredients and make an appetizer that was versatile enough to bring to both places.  I wanted something that could be made ahead, didn't require a lot of ingredients or time to put together, and of course delicious.  After some quick brainstorming, I decided to make a reconstructed baked potato of sorts... in the form of bacon wrapped fingerling potatoes. 



The fingerling potato is a thin skinned, yellow flesh potato that is high in nutrients and low in starch.  They have a firm texture and hold their shape really well, making them a great roasting potato (and the perfect potato for this recipe). They are available seasonally, so be sure to pick up a bag while supplies last!




My favourite brand is The Little Potato Company, a potato company based out of Edmonton, Alberta (the closest city to my hometown).  When they decided to send me a sample package of their potatoes and these fingerling potatoes were in the package, I was really excited to start brainstorming recipes!   I ended up coming up with this recipe, not only because everything in mini form is incredibly adorable, but because really, can you ever go wrong with the combination of potatoes, cheddar, and bacon?

Ingredients
- 8 oz sharp cheddar
- 1 lb bacon
- 1/2 cup sour cream (or greek yogurt)
- 1-2 green onions

Directions

Start with clean and dry fingerling potatoes.  Cut potatoes in half (lengthwise) and stuff with shredded cheese and chopped green onions (or your favourite herbs). 


Press potato halves back together, then wrap each potato with bacon.  If using medium-thich cut bacon, use 1/2 a slice per potato.  If using a thinner cut of bacon, use an entire slice. 


Bake in pre-heated 425 degree oven for 25-30 minutes, or until the bacon is cooked how you like it.  

Serve with a side of sour cream sprinkled with chopped green onions.
