Maple Scones & Internet Bullies


If you're here just for the maple scone recipe, I'll save you a bit of effort by telling you to scroll down to the very bottom to skip the next little bit.  The scones are delicious, you're going to love them, and thank you for stopping by to check them out!

For the rest of you, we need to sit down and have a very important conversation.

Something happened the other day, something that no blogger ever wants to encounter on their blog - the presence of a troll.  Now an internet troll isn't the same kind of troll that you had in the 90's, that was fun, and cool - sat on your desk with a head full of neon hair and a jewelled belly you would rub for good luck.  No, this type of troll is, well... simply put - an internet bully.

They troll around on comment boards, forums, and pages like mine hoping to create a reaction by saying something awful, rude, or obscene.  They say negative comments in hopes of getting a negative response and end up stirring a bunch of negative energy all around.  One day a few weeks ago, one of these very trolls thought it would be fun to visit my page.

The day before, I had posted a teaser to this recipe.  I had just made them, I was excited, and I wanted to share them with you all pretty much as soon as they came out of the oven. A lot of you thought they looked scrumptious and couldn't wait for the recipe, so the next day while I was enjoying my cup of coffee on the deck with a deliciously warm scone, I decided to share this with you all!  The internet troll didn't really like that and decided to be incredibly rude and say all kinds of hurtful things.

I think it's important to remember that bloggers are real people, with real feelings... When you're saying something rude you are saying it to an actual person, not just a faceless corporation.  Don't get me wrong, I don't mind constructive feedback... if it's about the recipe or my blog itself, I absolutely want to hear what you have to say.  But when it comes to attacking me personally, that's completely uncalled for.   I have absolutely no obligation whatsoever to write this blog.  I could literally stop tomorrow if I wanted to, and I wouldn't answer to anyone but myself.  I blog because I love to write, I love to cook, and I love to share thoughts, experiences, recipes, ideas, and conversation with random people by cooking and writing about it.  

The fact that eating scones on my deck was somehow so incredibly offensive that someone felt it necessary to acknowledge in such a negative way... completely blows my mind.  Apparently it blew a lot of your minds as well, because you were all very vocal about it! To each and every single person that shared a nice comment to try and deflect the negative comments that this other person wrote, you completely made my day.  You managed to turn such a negative situation into an incredibly positive one, and hate was literally killed with kindness that day.  Rather than have a couple of negative comments ruin my day, I had hundreds of positive, heartwarming comments to read instead.  Thank you.  Truly.

Now... enough serious talk, let's get back to the really important stuff - these maple scones!  They are perfect for fall, and taste so incredibly delicious.  I can assure you they go really well paired with a cup of coffee on your deck!  ;)

Ingredients

Scones
- 3 cups all-purpose flour
- 4 tbsp dark brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 3/4 cup cold butter, cut into small pieces
- 1/2 cup whipping cream
- 1/2 cup pure maple syrup

Icing
- 6 tbsp whipping cream
- 2 tbsp maple syrup
- 3/4 cup icing sugar
Directions
Pre-heat oven to 375 degrees. 
Combine flour, brown sugar, baking powder, baking soda, and salt in a medium bowl.  Add butter and work into flour mixture using fingers - when you are finished the mixture should resemble coarse meal. 
Stir whipping cream and maple surup together to blend.  
Slowly add cream mixture to flour mixture to blend.  Turn dough onto a lightly floured surface.  Knead dough gently until smooth, about 5-6 turns.  
Pat dough into an 8 inch round, then cut dough into 8 wedges.   Transfer wedges to a baking sheet. 
Bake in pre-heated oven until toothpick comes out clean.  Transfer to cooling rack. 
For icing
Whisk cream and maple syrup together.  Whip in powdered sugar to form a thick glaze. 
Spread or drizzle glaze on warm scones.

  1. Good for you. Never let a troll ruin your day. Their lives are miserable so they hate the sight of you enjoying those gorgeous scones in that lovely setting. I think the only negative thing I can say to you is that you didn't invite me over for scones. :)

  3. Bravo, Jax! I seriously couldn't believe that someone would be that pathetic and mean spirited over you relaxing on your deck, with coffee, and your delectable scones. They're just miserable people who want to spread their misery. You keep doin' you because you're wonderful, fabulous, and everything you bake makes me drool. Love these scones and your attitude :)
