Turkey Leftovers Soup

 
It's Canadian Thanksgiving this weekend, and I have zero plans.  It's been a really long time since I've had zero plans for a couple of day, let alone a 3 day weekend.  I saw that my local grocery store had a really awesome sale on turkey's, so I picked one up and threw it in the oven around 1pm yesterday. 
 
By 4pm, I had all of the meat portioned, and the turkey bones simmering in the slow cooker.  I left the slow cooker simmering all night long, and this morning woke to the most delicious turkey stock (there's something deliciously wonderful about drifting off to sleep to the smells of simmering turkey wafting through the house). 
 
After having a lazy Sunday morning, I got to work making turkey soup, using up leftovers from the day before.  Certainly got a lot accomplished for a zero plans Thanksgiving. 
 
Ingredients

- 2 medium carrots
- 1 onion
- 1 tbsp oil 
- 1-2 cloves garlic
- 1-2 L Turkey Stock
- 1-2 bay leaves 
- salt & pepper, to taste
- 2-3 medium potatoes
- 1 cup chopped, cooked turkey


Disclaimer: I hate celery with a fiery passion, but if you enjoy this vile vegetable, this seems to be the type of recipe you would probably use it in.  Use at your own discretion.

Directions
 
Chop carrots and onion and saute in oil in a large pot over medium heat for 3-5 minutes to bring out the flavours. 
 
Crush garlic into pot and saute for additional 1-2 minutes.  
 
Add turkey stock, bay leaves, and salt and pepper and bring to a boil. Dice potatoes into cubes and add to pot.  
 
Once potatoes are cooked, add turkey and bring back up to temperature.
