CWJ Food Bank Challenge: Day 6

Today you are actually getting a myriad of recipes along with this post.  Though it literally took about 10-15 minutes to throw breakfast together this morning, it took 4 individual recipes to make it all happen. On the plus side, we now have just under 2 cups homemade syrup to use this month! That sure would have came in handy when we made these No Bake Granola Balls on Day 1

Lets get to it!  


Total Cost of each meal is based on 2 people unless otherwise indicated. 

Breakfast (10:30 am)
Brown Butter Crepes with  
Blueberry Sauce and Brown Sugar Syrup

Total Cost: $2.50*
This includes 8 crepes, 1 cup blueberry sauce, bananas foster, and 1/4 cup of syrup
Crepes

Whisk together: 1 cup flour, 2 eggs, 1/2 cup milk, 1/2 cup water, 2 tbsp browned butter
Preheat a large skilled over medium heat.  Ladle 1/3 cup batter into skillet, turning skilled with hands to allow the crepes batter to spread on as much surface as possible.  Cook 30 seconds or so per side, or until lightly browed. 
Blueberry Sauce
1 cup frozen blueberries, 4 tbsp water, 2 tbsp brown sugar, 1 tbsp flour (I usually use cornstarch)
Heat berries, 2 tbsp water and brown sugar over medium heat. Combine flour and remaining 2 tbsp water (ice cold) being carful to whisk out any lumps.  Wisk into berry mixture, and cook for 1-2 more minutes or until thickened. 

Bananas Foster* 
2 tbsp butter, 2 tbsp brown sugar, 2 bananas 
In a medium skillet set to medium heat, melt butter.  Add brown sugar and cook for 1-2 minutes.  Add chopped banana cooking for another 1-2 minutes being careful not to burn or overcook (the bananas will lose their shape and turn to mush). 
* True bananas foster usually has rum and vanilla, but this still worked great without!  

Lunch (1 pm)
Grilled Cheese w/ Raw Veggies
Total Cost: $2.03

I think normally we both would have just had 2 grilled cheese sandwiches each, slathered them in ketchup (I normally don't like ketchup but grilled cheese is one of those rare occurrences)  and called it a day. Since I was trying to create a more well rounded meal we incorporated veggies into the mix instead of that second grilled cheese.  The combination of crunchy veggies with gooey cheese and fried bread was a nice balance! 

Dinner (8 pm)
Chicken Fried Rice 
Total Cost: $2.27

Normally on Sundays I like to make a really big meal like roasted chicken, or a nice beef roast with my Gramm's yorkshire pudding.  Though we purchased a roast this month, we froze it to saving for the last week of the food challenge. 
Instead, dinner tonight was leftovers from yesterday.  The fried rice ended up making way more servings that I was expected, and since I had already frozen and defrosted this - I didn't want it it go to waste. I was really happy with how this turned out even though I didn't follow my usual recipe exactly - it was still quite good!  I will definitely be more rice dishes and freezing them for quick meals from now on. 
Total time spent preparing food today:  30 minutes
 
Total Daily Meal Cost: $3.40/person ($6.80 total)

Under Budget: $0.60/person ($1.20 total)
