CWJ Food Bank Challenge: Day 4

Well guys, today at only 4 days in, I encountered probably the biggest challenge that I will encounter throughout the course of this project (and I am even travelling for a few days towards the middle of this month - I thought that was going to be the greatest challenge).  Even still today ended up being our best day as far as the daily food budget went.
 
 
Last night at the last minute, I ended up at a local foodie event that was hosted by an array of famous foodies.   The food there was to die for - charcuterie as far as the eye could see, giant prawns cooked in a garlicky butter sauce, spun sugar desserts, and even creme BrĂ»le made right in front of our eyes.  Needless to say, nothing there clocked in at under $4. 
As a result, and in order to stay true to this challenge, I ate a homemade cucumber sandwich in my car on the way home.  Don't get me wrong - a nice cucumber sandwich made on homemade bread is one of my absolute favourite things in the world - I was feeling a little wistful though as images of fine dining were freshly burned into my memory. 
On the plus side, Marc made 2 loaves of homemade bread today,  so that has been a really nice addition to our grocery menu! 
Day 4 Food Diary: 
Breakfast (8 am)
Blueberry Oatmeal and Coffee w/ milk and brown sugar
Total Cost: $0.79

 I used this recipe subbing steel cut oats for quick oats.  I made this using the stovetop method as outlined in this recipe, adding 1/4 cup coconut along with the blueberries.

Lunch (8:15 pm)
 Cucumber Sandwich, an Orange and a Banana
Total Cost: $1.38

I only ended up eating 1 of the cucumber sandwiches, and I saved the orange for an evening snack.  Even though I could have eaten my lunch at any time today, I think I was just far too excited about the evening's events to be hungry.  For those wondering what Marc ate for lunch, the dumplings ended up making 6 giant servings, not 4 as I had original suspected, so Marc noshed on that for lunch as well.


Dinner (9:30 pm)
Creamy Chicken and Dumplings
Total Cost: $2.90

This was leftovers from yesterday. At the beginning of this journey I decided that we'd never have 2 meals back to back (uhg, leftovers) but today was BUSY so I was thankful that I had this meal to come home to after a long and exciting day!  
Total time spent preparing food today:  15 minutes 
(most everything was already prepared from yesterday, cutting down drastically on today's prep time)

Total Daily Meal Cost: $2.54/person ($5.07 total)

Under Budget: $1.47/person ($2.93 total)
