CWJ Food Bank Challenge: Day 20


Today was Saturday and I was in a baking mood.  I made a batch of these English Muffins.  We ended up having breakfast sandwiches for brunch, which was really tasty and definitely hit the spot!  This was the last of our eggs though, so we will have to buy more this week!  If you're just reading now, you can catch up on the challenge here

We had the leftover potato skins from yesterday's lunch.

Dinner (6 pm)
Roasted Chicken Dinner w/ Mashed Potatoes and Peas
Total Cost: $4.37
We made this using the exact same method from Day 1, only we used a frozen chicken instead of a fresh one.  Marc actually said that he thought this chicken turned out even better than the last one oddly enough (you would think fresh would taste better!).  I have to agree though - I don't know what it was, but it sure was extra delicious.  I threw the leftovers (bones, etc. included) into the slow cooker with a couple of liters of water (just enough to cover the chicken) to cook down overnight.  The result will be tasty broth for something this upcoming week!

Over/Under Budget: $0.86 or $0.43 per person
